Surprising Lambs Quarters

Did you know you can eat Lambsquarter (not to be confused with Lambsears which are short stubby and soft - don't eat those!!!!)

Many people see Lambs Quarters as nothing more than a common weed, never realizing that a tasty and nutritious green vegetable could be enjoyed, free for the picking.
Lambs quarter, sometimes referred to as goosefoot for the shape of its leaves, is my favorite edible weed and is easy to recognize once you become familiar with it.

Lambs Quarters.thumbnail Surprising Lambs QuartersAs with any edible weed or wild plant don’t eat unless you are positive of its identification and that it has not been exposed to chemical sprays or pollution. So if you’re not familiar with lambs quarter refer to a good edible weed field guide or consult with someone who is familiar with the plant before eating it.
Lambs quarter can frequently be found growing in vegetable gardens, on disturbed soil, and along the fringes of fields and banks. The plants can grow to about four feet in height with multiple branches forming off of a main squarish looking central stem. Lambs quarter leaves often have a white, pollen-like substance coating their undersides.

Well... how is your garden growing? Have you started planting yet?  Still tilling the soil?

Inexperience or even a lack of gardening knowledge can cause many newbie gardeners to put it off.
But I want to encourage you. We were all beginners at one time….in everything! The first time you till the soil and put those tiny seeds in the ground can seem a little daunting.
But you can do it. So start with something simple like lettuce and radishes.  There is nothing like seeing the sprouts coming up to get you into the gardening spirit.

Get Started on Your "Fall" Garden!

We hope your summer garden is in full bloom now, with lots of tomatoes, squash, beans, basil, okra and potatoes.  But now, it's time to start thinking of that fall and winter garden, and what you need to do to get ready:
  1. Do a soil test and find out what amendments may be needed, and if everything's ok in that department, figure out how much compost you'll want to add and turn into the soil.
  2. Call your nursery and ask what plants do well in your area for food production (unless you know already).  If you want, start those seedlings now.
  3. Make notes on what did well this spring and summer, what varieties did better than others, and consider saving some of your own seeds.  There are lots of YouTube videos on how to do this successfully.
So, while enjoying a ripe juicy tomato, start your imagination going and get going on your next garden!

REMEMBER:  You can grow potatoes in containers also!  For instance, patio pots, garbage cans, plastic garbage bags, in fact almost any container you can think of, can become your "potato garden." Again, the basic considerations for growing potatoes in almost any container are fertile soil, a sunny location and adequate water.

Harvesting Potatoes
 

You can begin harvesting potatoes for your dinner table about eight weeks from time of planting. These small, tasty "new potatoes" are perfect to use for soup or to cook with creamed peas or other dishes. The new potatoes will appear shortly after your potato plants have bloomed and before the vines die. When the potatoes are 1 to 2 inches in size, dig a few hills to enjoy.

GROW POTATOES IN STRAW, THE SWEDISH WAY!

Yes, it is possible to grow potatoes in straw (Click Here) for story.

Here's an excerpt:
Even a couch potato can grow a good potato crop with very little effort. By using straw and a little soil preparation up front, it's easy to grow an admirable crop in a limited space. And few crops yield more than the potato.

Start by choosing an early maturing variety such as Norgold Russet or Superior (a white potato) at your local garden center. Avoid the temptation to buy potatoes for planting from the supermarket. These potatoes may be treated with sprout inhibitors or may carry disease organisms to contaminate your garden soil.

Choose egg size tubers or cut larger potatoes into two or three seed pieces, each with an "eye" or sprout. Make cuts the day before planting and let the cut surfaces dry or "heal" at room temperature overnight. (click link above for the entire story...really cool!)
